St. Patrick's Day dinner

I've got 2.75lbs of corned beef. I figure it takes about 50min per pound to cook it properly. It needs to cool for 30min before it is sliced. If I want to eat at 6:00pm and I am riding to Dudley's Bakery (4.5lbs) what is the latest I can leave on my bike to be back in time to start the corned beef? I'm thinking I better head out by 10:40am
